Chef Valentina Cruz was seven when she first understood fire. Her grandmother, Lupe, baked pan de yema in a clay oven behind their house in Tlacolula — the smoke, the ash, the bread that emerged darker than expected but more alive than anything Valentina had tasted since.

Thirty years later, she's burning wood again. But now the oven is ten feet tall, the kitchen seats forty-two, and the bread — if you can call it that — arrives without apology.

The Failed First Menu

"A disastrous opening night in Pilsen, 2014."

Chef Marcus Webb served forty-three covers on his first night. Thirty-one sent back the lamb. Two tables walked out before dessert. A local food blogger posted three words: "Not ready yet." Marcus printed that review and taped it to his prep station. It stayed there for two years.

The lamb is still on the menu. It has not been returned since March 2016. What changed is the subject of the most interesting conversation in Chicago dining right now.

It was a Tuesday in November, slow enough that chef Priya Agarwal was expediting herself. A man sat at table nine, ordered nothing from the menu, and asked if the kitchen would cook what it felt like making. She sent out seven courses she had never made before and has never made since. He was Jonathan Yee of the Chronicle. The review ran Sunday.

Nocturne now requires reservations six weeks in advance. The menu changes entirely every forty-eight hours. Chef Agarwal has not repeated a dish since that Tuesday. We were there last Thursday.

Halcyon

"A flooded kitchen and a borrowed stove."

Chef Desiree Fontenot lost everything in 2021. The restaurant she had spent eight years building in the Tremé was underwater by Tuesday morning. She borrowed a neighbor's propane stove, set it on the sidewalk, and cooked gumbo for three days straight — feeding the block, the volunteers, whoever arrived with a bowl.

The new Halcyon opened fourteen months later, four blocks from where the old one stood. The gumbo from the sidewalk is on the menu. It is listed at market price. It is always the same price: free, for anyone who needs it.
